A comforting and delicious take on the classic soup made with your fertility in mind.

- In a large Dutch oven or soup pot, heat 1 tbsp avocado oil over medium heat. Add the ground Italian sausage and begin breaking it up with a wooden spoon.
- While the pork browns, prepare your veggies (carrots, celery, onion, zucchini and garlic) by chopping them into small, bite-sized pieces (if you haven't done so already).
- Add the veggies to the browned pork, then add 1 tsp salt, cracked pepper and stir. Allow the veggies to cook until the onions become translucent and begin to soften, about 5-7 minutes.
- Add the can of crushed tomatoes and beef bone broth, bring the soup to a boil, then turn the heat down to low and continue simmering for another 10-15 minutes.
- Add the spinach, parsley and red kidney beans. Continue to simmer until the spinach is fully wilted, then taste and season with additional salt and pepper, if needed.
- Serve warm with grated parmesan on top!
