A comforting and delicious take on the classic soup made with your fertility in mind.

  1. In a large Dutch oven or soup pot, heat 1 tbsp avocado oil over medium heat. Add the ground Italian sausage and begin breaking it up with a wooden spoon.
  2. While the pork browns, prepare your veggies (carrots, celery, onion, zucchini and garlic) by chopping them into small, bite-sized pieces (if you haven't done so already).
  3. Add the veggies to the browned pork, then add 1 tsp salt, cracked pepper and stir. Allow the veggies to cook until the onions become translucent and begin to soften, about 5-7 minutes.
  4. Add the can of crushed tomatoes and beef bone broth, bring the soup to a boil, then turn the heat down to low and continue simmering for another 10-15 minutes.
  5. Add the spinach, parsley and red kidney beans. Continue to simmer until the spinach is fully wilted, then taste and season with additional salt and pepper, if needed.
  6. Serve warm with grated parmesan on top!
