Crockpot Pork Loin

This one-pot meal has everything you need from slow-cooked meat (rich in fertility boosting amino acids) to low glycemic veggies (meaning this meal is blood sugar friendly and supportive of hormone balance). Not to mention, it’s delicious and perfect for a cozy winter night!

Crockpot Pork Loin

Serves: 4-5

Cook Time: 4-6 hours (in the crockpot)

Ingredients:

  • 2 lbs. pork loin

  • 2 cups chicken bone broth

  • 4 garlic cloves, peeled and minced

  • 1 celery root, peeled and cut into 2-in cubes

    • You could also use potatoes! I prefer celery root as it is better for blood sugar balance.

  • 4-5 large carrots, peeled and cut into 2-in pieces

  • 2 cups green beans

  • 2 medium yellow onions, chopped into four pieces

  • Salt and pepper

  • Garlic powder

  • Maple syrup

  • Avocado oil

Supplies:

  • Crockpot

  • Small mixing bowl

  • Cast iron pan (or sturdy large pan)

  • Knife and cutting board

Directions:

  1. Chop the veggies. If you haven’t done so already, chop the celery root and carrots into 2-inch pieces. Mince the garlic and chop both onions into four pieces. Place all the chopped veggies into the crockpot. Then place the green beans in last and cover the veggies with 2 cups of chicken bone broth.

  2. Season the veggies with 1 tbsp avocado oil, 2 tsp salt and pepper to taste. Mix with your hands until all of the veggies are thoroughly coated.

  3. Season and sear the pork. Heat a large cast iron pan over medium heat. While the pan heats up, in a small mixing bowl, combine 1 tbsp avocado oil, 1 tbsp maple syrup, 1 tsp garlic powder, 2 tsp of salt and pepper to taste. Slather the seasoning over the pork using your hands or a spoon. Once hot, add the pork and sear on each side until browned (about 7-10 minutes total).

  4. Remove the pork from the pan and place on top of the vegetables in the crockpot. Set the crockpot on low for 5-7 hours or on high for 3-4 hours. If you have the time, every hour or two, use a spoon to baste the pork and stir the veggies. Essentially, you want the meat to be very tender and the vegetables to be fork tender.
